Singular Wines
The wine that changed our wine-making ideas.
We chose three very old plots (Revillas, Cascajos and Calvario) from which to make the first vintages. Then, with the increasing knowledge of the vintages that went by, we were left with only the first and oldest of them: Revillas.
A wine where the protagonist is a grape of adjusted production, due to the suffered potential of the vineyard, and defined by perfection: perfect grape, perfect maturation.
A Tempranillo at its best, the purity of the best grape from our region. A highly concentrated wine with a very long life that can only be produced in certain vintages.
- Viñedo: Revillas, planted in 1923 at 500m above sea level.
- 100% Tempranillo
- Production: 2.990 bottles
Wine-making
- Selection in the vineyard, only the best grapes reach the winery. Lightly destemmed so as not to damage the berries.
- Pre-fermentative cold maceration.
- Alcoholic fermentation in a small capacity tank, for 18 days at a maximum temperature of 29ºC.
- Pumped over and punched down according to the time of fermentation.
- Malolactic in new French oak barrels. 18 months of permanence in the barrels.
- The wine has not undergone any stabilization or filtration process.
Tasting notes
- Intense cherry with scarlet reflections.
- Good fruity expression>/span> (cherries, Claudia plums and ripe black fruit) accompanied by sweet and fine toasted aromas.
- Subtle earthy character, a reflection of its terroir.
- In the mouth, it provides very good fruit concentration and acidity.
- Unctuous, direct, and fresh but with warm essence. Balsamic notes of licorice.
- Frank in its length with an influence of oak present, leaving prominence to the fruit.
